It's been 2 1/2 years since Paula came out with her crew to dig test holes for the septic system. Since that time, we've had three of these 5-foot deep grave-sized holes on our property, causing anxiety over mishaps with animals or small children or vehicles; the photo was taken a couple of months after the haying, but when the hay is high in summer, you can't see where solid ground ends. We had Paula do this testing in 2015 because we anticipated building then, but it wasn't until late last summer that we were able to contact her again about the actual design, and then she spent months on it, out of her wheelhouse of planning for residential properties. Our desire to build a commercial kitchen has monumentally slowed our progress, moving us from routine building permits into the world of "explosion proof controls," amongst other requirements that have struck us as a little bit of overkill. We just want to process chickens and make salsa. The good news is that this morning the county cashed our check for the septic permit, putting us a step closer to having an Armageddon resilient facility.
